Wine variety:          Sangiovese, Merlot

Wineyard:                “Domata” and “Gelsomini”, vineyard, 400 meters above sea level, east-west exposure.  Drained, chalky/marly topsoil. Growing system with barbed wire.

Yield per hectare:  50 quintals

Grape harvest:        By hand in crates at the beginning of October

Wine-making:        Separated by vineyard in steel, thermal-regulated containers for 14-18 days with delestage fermentation and daily replacement.  The wine is then transferred into 15hl barrels where malolactic fermentation takes place.

Refining:                   24 months in French oak barrels of different capacities.  The refining in bottle lasts for at least 1 year.

Alcohol content:    13.5 % vol.

Wine-tasting notes:
Garnet-colored tending to brick red. The olfactory bouquet tends to maturity, with notes spirited fruit, hints of red fruit jam, vanilla and cloves.  Soft and round on the palate, good balance between acidity and ripe tannin. Fresh, quite long and persistent wine. Pleasant final  with notes of ripe fruits.

Ideal pairing:
Excellent with aged cheeses, cold cuts and stewed meat.
