Wine variety: Sangiovese, Merlot
Vineyard: “Quercione” vineyard, 250/300 meters above sea level, east-west exposure. Drained, chalky/ marly topsoil. Growing system with barbed wire.
Yield per hectare: 70 tons
Grape harvest: by hand, in crates
Period: last September, first days of October
Wine- making: Separated per vine, in cement containers of small and medium capacity, for 15 – 18 days, with daily pumping over of the air. The wine is then transferred to wooden barrels where malolactic fermentation takes place.
Refining: 18 months in barrels of 15 / 20hl. The refining in bottle lasts for at least 6 months.
Alcohol content: 13.5 % vol.
